Swipe left to see new and old grafts; Jutta uses scion wood from healthy old trees in the orchard. These are varieties no longer grown commercially because growers prefer walnuts that open easily to reveal unbroken halves. Older varieties like these were selected for superior taste.

A smooth surface makes it easier to find all the walnuts during harvest when the trees are shaken and the nuts fall to the ground. It's important to pick them all up not just to maximize the harvest, but good sanitation means that there are no places for insects to overwinter, especially important for their certified organic orchard.
When the harvest is finished, the wild animals step in and help by eating the fallen walnuts that the harvesting crew has missed. Cooperation!
